How does the black pepper actually get its color? Well, it's like this: When the pepper berries are still unripe, they are actually green at first. But if they are then left to dry in the air, the color changes and the pepper turns black. And something else happens as a result of the drying process. The spiciness of the spice comes out more. Fresh, fruity and sometimes even citrusy flavors, on the other hand, tend to fade into the background.
