The basis are the different varieties of mustard seeds, which vary in color from white-yellow to brownish to black, the darker the grains the hotter the whole thing. The use is as varied as its colors and so the grains are used for seasoning marinades, pickling as well as for cooking delicious soups, stews or fish and meat dishes.
