Mustard has many different sides. It can be sweet or hot, grainy or smooth. It is based on the different varieties of mustard seeds, which vary in colour from white-yellow to brownish to black, the darker the grains the sharper the whole thing becomes. Their use is as varied as their colours, and so the grains are used to season marinades, pickles as well as to cook delicious soups, stews or fish and meat dishes.
