Pumpkin soup with chilli flakes
This is needed:
- 2 tablespoons oil
- 1 onion
- 2 apples
- 600-800g pumpkin meat (butternut or hokahido)
- 1 piece of ginger
- 1-2 tsp chilli flakes
- Sea-salt
- white pepper from the mill
- 300-400ml vegetables or chicken broth
- 200ml cream
- 200ml coconut milk
This is how it’s done:
Peel and dice onion, peel, core and dice apples. Capsize and dice the pumpkin. Peel and dice the ginger. Heat the oil in the saucepan and braise the onions in it. Add the pumpkin, apple and ginger. Season with salt, pepper and chilli flakes and pour on the broth, bring to a boil and let cook for 15-20 minutes. Puree the pumpkin with the blender. Add cream and coconut milk. Possibly. add a little more broth until the desired consistency is achieved. Season with pepper, salt and chilli flakes.
