after the sweet February we have something hearty for you in March:
Lamb fillet in yoghurt sauce
You need the following ingredients:
- 4 lamb fillets
- Salt
- Pepper
- Herbs of Provence
- 1 bunch of fresh chives
- 1 bunch of fresh flat-leaf parsley
- 1 tsp granulated garlic
- 4 tbsp olive oil
- 2 onions
- 250g yogurt
And then it starts:
In the first step, the lamb fillets are salted and peppered according to personal taste. Next, we mix our Provence herbs with 2 tablespoons of olive oil and rub the fillets with them from all sides. After the fillets have been marinated for 30 minutes, they are then fried with the remaining oil from both sides for 2 minutes. When the whole thing is crispy fried, we can leave the fillets in the pan on low heat. Don’t forget to turn from time to time!
In the meantime, we can chop the parsley and cut the chives into tubes. When the fillets are “through” we can take the pan off the stove. We then stir the yoghurt with the frying fat and add the chives, parsley and garlic at the same time.
Finally, you can season the sauce again with salt and pepper. Finished!
