Laura’s favorite: Young Kitchen – Café de Paris

The favorite spice from our trainee Laura is clearly Café de Paris, from our new product line Young Kitchen. The mixture is a popular spice preparation for the production of herb butter. It was created in the 1930s in the Boubier family’s Geneva restaurant “du Coq d’Or”. The spice mixture was named after the “Café de Paris” restaurant, which belonged to Madame Boubier’s son-in-law. The original recipe has remained a well-kept family secret to this day and is still served at the Café de Paris, entrecôtes. The herb butter is not only suitable for the French classic, but also for steak and BBQ or for making a spicy sauce.

Recipe:

  • 50 g soft butter
  • 2 teaspoons of YK Café de Paris

Place the butter in a bowl and mix with Young Kitchen – Café de Paris. Cover the bowl with cling film and put the herb butter in the fridge until it has the desired consistency.
