The invisible secret weapon: In contrast to green and black pepper, the white pepper is harvested fully ripe. At this point, the pepper is red. Through a fermentation lasting several days, the red, dark shell dissolves from the pepper grain and the pepper becomes white. The sharpness corresponds to that of the black pepper, whereby the taste is clearly more discreet by the removal of the outer shell. It is used to taste at the last minute, as it brings the spice into the dish without changing the actual taste too much.
