But what is actually behind it?<\/strong><\/span><\/div>\n<\/div>\n

The series consists of four products – two citrus fruits, two berries.<\/p>\n

Our strawberries and raspberries were freeze-dried, which means “shock-frozen”. This is done so that ice crystals do not destroy the structure of the berries. After that, the berries are heated in a vacuum, with the temperatures still below freezing. Warming sublimes the water, more simply, it disappears, because it changes from the solid state to the gaseous state and skips the liquid state.<\/p>\n

The freeze-dried fruit in the drink or yoghurt has the advantage that when it comes into contact with liquid it fills up again and becomes soft – it becomes “fruit” again.<\/p>\n

In the case of the berries, we decided to freeze-dry so that the shape, structure and aroma of the berries are retained.<\/p>\n

Our citrus fruits, orange and lemon, on the other hand, are air-dried. When drying air, the water is extracted from the fruit by dry and warm air. In this case, the hard shell remains, as does the aroma, which even intensifies! Here we find the use of air-dried fruit more natural, since the essential oils are stuck in the bowl and this is preserved here, in contrast to the process of freeze-drying, in which the bowl would become brittle. And the most important thing is of course that the aroma is not lost!<\/p>\n

Our fruits are great in sparkling wine and cocktails! You can even make a homemade iced tea with them in no time at all, and they are also ideal for spicing up water!<\/p>\n
